Welcome to Knisa. Prime meats cooked over wood, in the heart of Thessaloniki.
In ancient Greek, “knisa” meant the scent of meat roasting over fire, a word that goes all the way back to Homer. It’s a fitting name for the restaurant chef Filippos Stampoulis and Georgia Sampani opened in May 2026 beside Syntrivani Square, a short walk from the Rotunda arch (Kamara) and Aristotle University. After years in hotel kitchens in London, Paris and Spain, and many summer seasons in Mykonos and Halkidiki, the couple set up their first place of their own here. The idea is simple: great produce, wood and charcoal. The cuts of the day go up on a blackboard, and the menu follows the seasons, often changing week to week.

Bavette, T-bone, striploin and whatever stands out that day, chalked up on the blackboard and cooked over wood and charcoal.

Caramelised outside, creamy inside, topped with seasonal fruit for a sweet finish.
